Coming from Australia 5 years ago, I have been on the hunt for an Aussie style bacon, well this is it! It has so much flavour without being too smoky and a much healthier option. This was a great breakfast item -- and much leaner than traditional bacon. It reminded me of the bacon we had while vacationing in Ireland. I use it to recreate the breakfasts I had while visiting Ireland.
Accompanied by eggs, mushrooms, tomatoes, and soda bread, toasted or not, I was back in Portadown or Dublin. The slices can be a little thin so take care not to cook them too long, avoid high heat and be gentle when turning the slices.
